What Is Gelatin

Gelatin is essentially cooked collagen which is sourced from animal bones and connective tissue. It’s an ancestral food that has been used to make traditional desserts, jellies, puddings, and soup stocks. It’s a nutrient dense, protein resource that is very supportive to the metabolic system.

Benefits of Gelatin

Gelatin contains essential amino acids (amino acids we can’t only source through food) that help to support the digestive system, joints, bones, brain health, heart health, and is incredibly supportive to our hormone health!  Amino acids are the building blocks of our body, they are essential for building, repairing, and maintaining every part of our body including our musckoskeletal sytem (bones and muscles) as well as all our organs.

Glutamic Acid: helps to repair and maintain the mucosal lining of the gut. It also stimulates bile production that helps to support digestion

Glycine: is very supportive for the nervous system and helps with melatonin production, supporting restorative sleep. It’s also important for blood sugar regulation and reducing inflammation

Valine: helps to support muscle composition and boost athletic performance

Proline - helps skin elasticity, supporting youthful skin and aiding in continuous collagen production

Gelatin Gummies

***As a rule of thumb, I usually use 4 cups liquid to 6 tbsp of gelatin. If you want them more gummy, add more gelatin. If you want them more gooier like jelly, add less gelatin.

  1. Bloom gelatin (recommend 6-7 scoop) in bowl of cold liquid - bloom means sprinkle gelatin over water and allow the gelatin to absorb the water

  2. While letting the gelatin bloom, warm up 3 cups of liquid (juice, lemonade, cooked fruit, fruit puree etc). I love using a tart juice like cranberry, pomegranate, or blueberry.

  3. Add your choice of sweetener (honey or maple syrup), anywhere from 1/3 -1/2 cup depending on desirable sweetness

  4. Pour bloomed gelatin into the hot liquid and mix with a whis until completely dissolved

  5. Poor into glass container and let cool before putting into the fridge

  6. Leave in fridge for 4 hrs or overnight

  7. Then cup up into desirable squares and enjoy

***If you want to make shaped gummies (like gummy bears) with kids, purchase silicon molds and add more gelatin for gummier texture

Gelatin Marshmallows

  1. Bloom 3 1/2 scoops of gelatin in a bowl of 1 cup of cold water

  2. Add to a pot and heat up until melted

  3. Add 1/3-1/2 cup of Maple Syrup to a large bowl, 1 tsp vanilla extract, and any other powder additions (cacao, mushroom powders, ceylon cinnamon, pearl powder etc)

  4. Add your melted gelatin to the bowl of maple syrup and use an electric or stand alone mixer for about 15-20 min until the mixture becomes whipped, thick., and fluffy

  5. Quickly pour into a glass baking dish (recommend lining with parchment paper)

  6. Pop in the fridge for 4 hrs or overnight

  7. Remove parchment paper from glass container and cut marshmallows into desired size

  8. Top on any hot beverages or enjoy as a snack

Cacao Panna cotta

  1. Sprinkle 1.5 tsp of gelatin over 1/4 cup whole milk and set aside

  2. While gelatin is blooming, add 1/2 cup whole milk or half and half, 1/2 cup cream, 1/2 tsp vanilla extract, 3 tbl maple syrup/coconut sugar/honey, and 1 tbl cacao to a sauce pan on low heat, stirring frequently

  3. Heat until it is hot and steaming but don’t let it come to a boil

  4. Pour the hot mixture into the bowl where the gelatin is full bloomed

  5. Whisk until the mixture is fully incorporated and pour into glass jars

  6. Cover and refrigerate for 6hrs

  7. Top with whip cream and strawberries, enjoy!

*** Makes about 2 small mason jars worth

Buying Gelatin from a reliable source is essential though!You want to know that the animal was healthy and lived on nutrient dense soil.
